Bagels

Recipe

Makes 6

Ingredients

  • 380g Bread Flour

  • 80g sourdough discard

  • 5-6g of instant yeast

  • 20g sugar

  • 190g water

  • 7g salt

  • 3g malt powder (opt)

  • 10g oil (opt)

Preparation

  1. Mix ingredients and knead until smooth

  2. Let rise in a bowl for about an hour or until doubled

  3. Divide into 6 roughly 120g balls

  4. Flatten and roll each ball into a long snake, connecting the tube into a bagel shape, closing the seams

  5. Let rise for a little less than an hour place in the fridge for an hour or two

  6. Get a wide pot of boiling water ready and add a teaspoon of baking soda and sugar

  7. Boil bagels for 20-30 seconds a side

  8. Place on a baking sheet and bake around 400-425 F for 20min (might have to decrease temp in the last few minutes of bake)
