Bagels
Recipe
Makes 6
Ingredients
380g Bread Flour
80g sourdough discard
5-6g of instant yeast
20g sugar
190g water
7g salt
3g malt powder (opt)
10g oil (opt)
Preparation
Mix ingredients and knead until smooth
Let rise in a bowl for about an hour or until doubled
Divide into 6 roughly 120g balls
Flatten and roll each ball into a long snake, connecting the tube into a bagel shape, closing the seams
Let rise for a little less than an hour place in the fridge for an hour or two
Get a wide pot of boiling water ready and add a teaspoon of baking soda and sugar
Boil bagels for 20-30 seconds a side
Place on a baking sheet and bake around 400-425 F for 20min (might have to decrease temp in the last few minutes of bake)
